Bacon Cheddar Scones

I had a bunch of cheese left over from a party we had over the weekend, and I wasn't sure what to do with it.  We have been on a scone kick after making fresh blueberry scones last week, so I figured why not try a savory version.  And thus, these scones were born.  And then consumed...



Bacon Cheddar Scones

Yield: 8 scones

Ingredients:
2 cups all purpose flour
1 Tbsp baking powder
1/4 tsp salt
8 Tbsp butter, cold and diced into small pieces
1 large egg
1 cup cheddar cheese
2-6 strips of bacon, cooked, cooked, and diced
1/2 cup half & half

1.  Preheat oven to 400 degrees.

2. In a mixing bowl, combine flour, baking powder, and salt.  Slowly add pieces of diced butter until the flour mixture looks crumbly.

3.  Pour in the half & half and add the egg.  Mix until the dough begins to come together.  Then add cheese and bacon.

4. Remove the dough from the bowl, and place on a lightly floured surface.  Flatten the dough into a disk, about the size of your hand, and use a sharp knife to cut into 8 pieces.  

5. Place onto a lightly greased baking sheet and bake 17-20 minutes, or until they are lightly brown.  Cook for a few minutes before eating.

Optional- Brush the baked scones with melted butter & garlic.  Or add chives, green onions garlic or other herbs right into the dough.
